Trash decides what's on the menu

Have you ever heard of dumpster diving? Dumpster divers are people who live from trash. It might sound weird but think about how many food ends up in the trash, especially by supermarkets. A lot of the food that gets thrown away isn't even rotten, but it simply gets thrown out because it doesn't look that pretty or may have a brown spot here or there. Dumpster divers are people who take food that is still eatable out of the trash. It is cost-effective and it minimizes waste.

When you think about trash-eating you probably would picture this restaurant below, but the opposite is the case! Let me explain..



Supermarket Albert Heijn takes things in own hands. Together with organisation Instock they made a pop-up restaurant where you can eat food that normally would have ended up in the trash. The menu depends on 'the catch of the day': trash decides what for dinner. The restaurant also does take-out: a sustainable twist to the take-out we're used to. AH is being transparent about what they throw away and they admit that something has to change.

Restaurant that cook with waste is something we see more and more, but this one is unique because of it's collaboration with AH. (linked to the 4 principles of 'The Open World' by Don Tapscott.) It's a conscious move of AH and it's a step in the right direction. I hope more supermarkets will follow this great example!
